Restaurant Review:
Pinza

Business Bay

There are quite a few homegrown restaurants on Dubai’s food scene and we are thoroughly enjoying our sessions at every one of them! One of the recent Dubai based concepts that we discovered was Pinza, a pizza parlor with a difference. How is it different you ask? Well, Pinza position themselves as “the modern foodie’s answer to a wholesome, hand-kneaded crust.” Pinza debuted in Dubai in 2015 but prior to that, the minds behind the brand were kneading, baking and testing flour blends in Rome before they finalized their signature 30 hour fermented base. Till date, the freshest, authentic ingredients are brought in from Italy while vegetables are locally sourced whenever possible with only the crispest GMO-free veggies and herbs making the cut. Pinza has put a lot of thought into its dough which is lighter than usual as they use an 80% water per kilo ration as opposed to the standard 30-60% and then ferment it for a full 24-30 hours before baking. Thus you are essentially eating a base that is lower in calories, minimal gluten yet big on taste.
Here’s what we had at our recent tasting at Pinza:

  • Chicken Avocado Salad: Pulled Chicken, Avocado, Shallots, Spring Onions, Cilantro, Mixed Greens, Cherry Tomatoes With A Lime Dressing
  • Yummy Burrata: Arugula, Basil, Roasted Peppers, Cherry Tomatoes, Burrata Cheese And A Truffle – Balsamic Dressing
  • Pinzatalia: Tomato Sauce, Diced Mozzarella, Grana Padano Cheese, Pecorino Cheese, Cherry Tomatoes, Fresh Onions, Seasoned Chicken Basil
  • Tandoori Chicken: Tomato Sauce With Ground Masala, Diced Mozzarella, Fresh Onions, Tandoori Chicken, Jalapenos, Chutney Sauce And Cilantro
  • Nutella With Banana
As we waited with bated breath, the different treats began making their way out of the vast Business Bay kitchen which is coincidentally the hub of all Pinza orders and activities. We started with the salads; Burrata is indubitably something we can eat copious amounts of and we are adding the one at Pinza to the list of those we’ve loved! Freshness and great taste unite in this salad and it is a proper treat for cheese lovers. The chicken avocado salad is a healthy, flavorful one as well but the Burrata trumped it in the salad wars. As for the pizzas, we loved the presentations of both but it was the Pinzatalia that won the pizza sweepstakes for its delicious blend of sauces and toppings. Unfortunately, the Tandoori pizza was too heavy on the Masala and so all other flavors were lost. Overall though, the highlight was that the pizzas were indeed light and fluffy, thus absolutely no bloating or guilt were experienced by either of us! We ended the meal with a luscious yet light dessert Nutella pizza with one half covered in Bananas and boy, do we love guilt-free Nutella filled desserts or what! A gratifying end that’s for sure.

All in all, Pinza gets a Yay from us predominantly because of its healthy twist to one of our favorite food items and we can safely say that the claims they make aren’t tall ones!
